Melt in Your Mouth Lemon Bars

Lemon Bars recipe

Incredibly tender melt-in-your-mouth lemon bars. These bars will become a favorite!

Ingredients

Base 2 1/2 cups sifted all-purpose flour 1 cup confectioners' sugar 1 cup butter, softened Filling 4 large beaten eggs 2 cups granulated sugar 1 teaspoon vanilla extract (optional) 1/3 cup lemon juice 1/2 to 1 teaspoon fresh lemon rind (optional) 1/4 cup all-purpose flour 1/2 teaspoon baking powder

Instructions

Base

  1. Mix the butter into the flour and confectioners’ sugar. Mix with hands until it clings together.
  2. Press into a 13 x 9 x 2-inch pan.
  3. Bake at 350 degrees F for 20 to 25 minutes or until lightly browned.

Filling

  1. Beat together eggs, sugar, vanilla, extract, lemon juice and lemon rind, if using.
  2. Sift together flour and baking powder. Stir into egg mixture.
  3. Pour over baked, cooled crust.
  4. Bake at 350 degrees F for 25 minutes.
  5. Cool and sift confectioners’ sugar over the top.
  6. Cut into bars.
