Irish Soda Bread is delicious served warm, spread with butter and jam, Easy Lemon Curd, or cooled.

Ingredients

3 tablespoons butter, softened 2 1/2 cups all-purpose flour 2 tablespoons granulated sugar 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1/3 cup raisins (optional) 3/4 cup buttermilk

Instructions

  1. Heat oven to 375 degrees F. Grease a baking sheet and set aside.
  2. Cut butter into flour, sugar, baking soda, baking powder and salt until mixture resembles fine crumbs.
  3. Stir in raisins, if using, and enough buttermilk to make a soft dough.
  4. Turn onto a lightly floured surface; knead until smooth, 1 to 2 minutes.
  5. Shape into a round loaf about 6 1/2 inches in diameter.
  6. Place on the prepared baking sheet.
  7. Cut an X about 1/4 through center of loaf with a floured knife.
  8. Bake until golden brown, 35 to 45 minutes.
  9. Brush the top with melted butter if desired.
