Gyros are a traditional Greek sandwich. Gyros means “turn” or “revolution” in Greek.

Ingredients

Gyros 1 pound chicken, pork or lamb, thinly sliced 3 tablespoons olive oil 3 cloves garlic, minced 1 tablespoon dried oregano 1 teaspoon ground cumin 1 teaspoon smoked paprika 1/2 teaspoon ground coriander 1/2 teaspoon onion powder Salt and pepper, to taste Juice of 1 lemon Cucumber and Yogurt Sauce 4 ounces plain low fat yogurt 1/4 cup seeded and finely chopped cucumber 1 tablespoon finely chopped onion 1/2 clove garlic, crushed 1/2 teaspoon granulated sugar Assembly Pita bread or flatbreads Sliced tomatoes Sliced red onions Fresh lettuce or arugula Feta cheese (optional)

Instructions

Gyros

  1. In a bowl, combine olive oil, garlic, oregano, cumin, paprika, coriander, onion powder, lemon juice, salt and pepper.
  2. Add the sliced meat and toss to coat evenly.
  3. Cover and refrigerate for at least 30 minutes, ideally a few hours.
  4. Heat a skillet or grill over medium-high heat.
  5. Cook the marinated meat until crisply browned and cooked through, about 7 to 10 minutes.
  6. Meanwhile, prepare the Cucumber and Yogurt Sauce.

Cucumber and Yogurt Sauce

Place all the ingredients in a mixing bowl and mix thoroughly.

Assembly

  1. Warm the pita bread.
  2. Spread Cucumber and Yogurt Sauce on the bread.
  3. Add cooked meat, tomatoes, onions, lettuce and feta cheese, if using.
  4. Roll up and serve.

Notes

Tzatziki can be substituted for the Cucumber and Yogurt Sauce.
