2 large eggs (or 1/2 cup pasteurized egg substitute)
1/8 teaspoon salt
1/4 teaspoon vanilla extract
2 (9-inch) pie crusts, baked
1cupheavy cream or 1 (8-ounce) container Cool Whip
1/2cupsifted confectioners' sugar1cupcanned crushed pineapple, well drained and patted dry with a white paper towel
1/2cup chopped pecans
Instructions
Cream confectioners’ sugar and butter with electric mixer until fluffy.
Add eggs, salt and vanilla extract.
Beat until light and fluffy.
Spread mixture evenly into baked pie crusts.
Chill for at least 3 hours.
Whip cream (unless using Cool Whip) until stiff.
Blend in powdered sugar; fold in pineapple and pecans.
Spread mixture on top of filling and chill thoroughly.
