Frangipane Tart

Frangipane Tart recipe

Frangipane is a sweet, almond-flavored filling commonly used in pastries and tarts.

Ingredients

Sugar Cookie Dough 2/3 pound butter 2 2/3 cups granulated sugar 5 eggs 2 1/2 teaspoons vanilla extract 6 2/3 cups all-purpose flour 2 1/2 teaspoons baking powder Almond Cream 1/2 pound butter 1/2 pound granulated sugar 13 1/2 ounces almond paste 4 large eggs 2 ounces (7 1/2 tablespoons) all-purpose flour* 2 teaspoons salt Fruit Sliced or whole fruit of your choice

Instructions

Sugar Cookie Dough

  1. Cream butter and sugar until creamy.
  2. Beat in eggs and vanilla extract.
  3. In a separate bowl, mix flour, salt, baking powder and gradually add to creamed mixture.
    Refrigerate for two hours.
  4. Roll out to 1/8 inch thickness and cover tart pan.

Almond Cream

  1. Cream butter and sugar.
  2. Add almond paste and cream again.
  3. Add eggs. Add flour and mix until incorporated into mixture.
  4. Fill the tart shell with almond cream filling to the top of pan.
  5. Bake for 25 minutes at 350 degrees F. Make sure top is brown and filling is firm.
  6. Let cool completely before adding the fruit on top.

Fruit

  1. After cooling, top with fresh fruit such as raspberries, mango, kiwi or strawberries.

Notes

* For the most accurate weight, weigh flour on a kitchen scale.
