1 box cake mix (yellow, spice or chocolate)
1 teaspoon cinnamon
1 (15-ounce) can pure pumpkin purée
1/8cupavocado oil or coconut oil
Instructions
Heat oven to 350 degrees F .
Grease or line a 9 x 5-inch loaf pan with parchment paper.
In a large bowl, whisk together the cake mix and cinnamon.
Add the pumpkin purée and avocado or coconut oil and stir until fully combined. The mixture will be thick.
Pour the batter into the prepared loaf pan, spreading it out evenly.
Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean. Baking time may vary depending on your oven, so start checking at 50 minutes.
Let the bread cool in the pan for about 10 minutes, then remove it from the pan and allow it to cool completely on a wire rack.
To make muffins: Pour the batter into muffin tin cups (about 2/3 full) and bake for 20 to 25 minutes or until a wooden pick comes out clean.
