Doritos Chicken Casserole

- 2 cups cooked chicken, shredded (deli chicken is great for this)
- 2 cups shredded cheese, divided
- 1 can cream of chicken soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1 can Ro*Tel tomatoes, drained
- 1/2 packet taco seasoning or 1 tablespoon Taco Seasoning
- Bag of regular or nacho cheese Doritos
- Shredded cheese to cover
Instructions
- Heat oven to 350 degrees F. Grease a 2 quart baking dish.
- Combine chicken, 1 cup shredded cheese, chicken soup, milk, sour cream, Ro*Tel and taco seasoning.
- Add a layer of crushed Doritos (about 2 cups) to the baking dish.
- Add a layer of the chicken mixture.
- Repeat layering once more, ending with a layer of chicken mixture.
- Top with remaining 1 cup shredded cheese; cover, and bake for 30 to 35 minutes, until bubbling hot.
