Cranberry Nut Bread recipe

Cranberry nut bread is especially popular during the holiday season, but it can be enjoyed year-round.

Ingredients

2 cups all-purpose flour 1 cup granulated sugar 1 1/2 teaspoons baking powder 1 teaspoon kosher salt 1/2 teaspoon baking soda 1/4 cup butter, cubed 1 large egg, room temperature 3/4 cup orange juice 1 tablespoon grated orange zest 1 1/2 cups fresh or frozen cranberries 1/2 cup chopped walnuts

Instructions

    1. Heat oven to 350 degrees F. Grease an 8 x 4 inch loaf pan or line it with parchment paper.
    2. In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs.
    3. In a small bowl, whisk the egg, orange juice and zest; stir into dry ingredients just until moistened.
    4. Toss cranberries in a bit of flour to ensure that they don’t sink to the bottom while the bread is baking.
    5. Fold in cranberries and walnuts.
    6. Spoon batter into the prepared loaf pan. Bake until a toothpick inserted in the center comes out clean, 65 to 70 minutes*.
    7. Let cool in the pan for 15 minutes, then remove from the pan, and transfer to a wire rack to cool completely before slicing.

Notes

* If choosing to use a 9 x 5 inch loaf pan, bake for 50 to 55 minutes.
