Meatloaf2poundsground beef1 small onion, finely chopped
1 green bell pepper, diced
2 large eggs
3/4cupmilk25 Ritz crackers, crushed into crumbs
1/2cup shredded Cheddar cheese
Salt and pepper to taste
Topping1/2cupketchup1/2cupbrown sugar (packed)
1 teaspoon Dijon mustard
Instructions
Heat oven to 350 degrees F.
Meatloaf
In a mixing bowl, combine the ground beef, onion, bell pepper, eggs, milk, cracker crumbs, shredded cheese, salt and pepper to taste.
Form the mixture into a loaf shape, and place it in the center of a 9 x 13-inch baking dish.
Bake for 30 minutes.
While meatloaf is baking, make the Topping.
Remove from oven, and spread half of the Topping over the top.
Return the meatloaf to the oven and bake for another 30 minutes.
Remove from the oven again, and spread the other half of the Topping on top of the meatloaf.
Bake for another 10 minutes; serve.
Topping
In a bowl, combine the ketchup, brown sugar and mustard until well blended.
