Corned Beef and Cabbage

- 1 (4 pound) corned beef brisket with seasonings
- 6 ounces beer (optional)
- Water
- Onion, diced
- 1 clove garlic
- 1 bay leaf
- 4 or 5 medium potatoes, peeled and halved
- 6 carrots, halved
- 1 medium head cabbage, cut into 8 wedges
Instructions
- Place corned beef in slow cooker along with the seasoning packet, if included.
- Add the beer, if using. Barely cover with water.
- Add onion.
- Add garlic and bay leaves (if needed).
- Add cabbage, potatoes and carrots.
- Cover and cook on LOW for 10 to 12 hours.
Notes
If you have corned beef with a seasoning packet, do not add the garlic and bay leaves.
