Coca-Cola Roast recipe

The soda’s sweetness and acidity help tenderize the meat while adding a caramelized, slightly sweet glaze.

Ingredients

1 (2 to 3 pound) beef roast 1 can Coca-Cola (diet is fine) 1 envelope onion soup mix or 6 1/2 tablespoons homemade Dry Onion Soup Mix 1 can cream of mushroom soup Potatoes (optional) Carrots (optional) Mushrooms (optional)

Instructions

  1. Spray pressure cooker with cooking spray.
  2. Brown meat on all sides over medium heat.
  3. Add remaining ingredients and stir well.
  4. Close cooker. Bring up pressure and cook for 30 minutes.
  5. Release pressure.
  6. If using potatoes, carrots or mushrooms, put potatoes on the bottom and the carrots on the side. Scatter mushrooms over the top. Bring pressure back up. Cook for 15 minutes.
  7. Release pressure.

Notes

To bake in the oven: Place roast in pan. Mix onion soup mix and cream of mushroom soup together and pour over roast. If using carrots, potatoes or mushrooms, place them around the sides of the roast. Cover tightly with foil and bake at 325 degrees F for about 3 to 4 hours.

To make in a slow cooker: Place beef in slow cooker and top with dry onion soup mix. Place vegetables around roast. Mix together the cream of mushroom soup and the Coca-Cola in a bowl and pour over roast. Set slow cooker on LOW; cook for 6 to 8 hours. The longer you cook, the more tender the meat becomes. The liquid makes a great gravy!
