Classic Cornbread

Cornbread recipe

Cornbread is a classic baked bread made primarily from cornmeal, offering a slightly sweet and savory flavor.

Ingredients

1 cup yellow cornmeal 1 cup all-purpose flour 4 tablespoons granulated sugar 4 teaspoons baking powder 1/2 teaspoon salt 1 cup milk 1 egg 1/4 cup vegetable oil

Instructions

  1. Heat oven to 425 degrees F. Grease or spray an 8-inch square baking pan.
  2. In a large bowl, combine cornmeal, flour, sugar, baking powder and salt.
  3. Add milk, egg and oil. Beat until fairly smooth, about one minute.
  4. Pour batter into prepared pan, and bake for 20 to 23 minutes or until a wooden pick inserted into the center comes out clean.

Muffins or Corn Sticks: Pour cornbread batter into greased or paper-lined muffin cups OR hot well-greased corn stick pans. Bake for 15 to 18 minutes. Yields 12.

Tex-Mex Cornbread: Stir 1 cup whole kernel corn, 2 tablespoons chopped green chiles and 1/2 teaspoon chili powder into the batter. Bake for 22 to 25 minutes or until a wooden pick inserted into the center comes out clean. Remove from oven; top with 1/2 cup shredded Cheddar or Monterey Jack cheese.

 

Notes

When I’m out of milk, I use 1/2 cup water and 1/2 cup evaporated milk. It is even better made this way (if that’s possible).
