These cookies have a buttery shortbread layer, a chocolate layer, then a crunchy toffee and nut layer.

Ingredients

1 cup butter, softened 1 cup light brown sugar, firmly packed 1 egg yolk 1 teaspoon vanilla extract 1/4 teaspoon salt 2 cups unsifted all-purpose flour 1 (6 ounce) package semi-sweet chocolate chips 1 (8 ounce) bag Heath Bits o' Brickle English Toffee Baking Bits 3/4 cup chopped walnuts

Instructions

  1. Heat oven to 350 degrees F. Grease a 13 x 9 x 2 inch baking pan.
  2. Beat butter and sugar until light and fluffy.
  3. Add egg yolk, vanilla extract and salt.
  4. Blend well.
  5. Beat in flour just until combined.
  6. Turn into prepared pan, spreading evenly.
  7. Bake for 25 minutes or until golden brown.
  8. Remove from oven and immediately sprinkle with chocolate chips.
  9. When chocolate chips have melted, spread with an offset spatula, and sprinkle with English Toffee baking bits and walnuts.
  10. Refrigerate for at least 30 minutes before cutting into squares.
  11. Store covered in the refrigerator.
