Chili Mac 'n' Cheese

This is a super recipe for Chili Mac ‘n’ Cheese. The recipe can easily be halved if you would like to make less.

Ingredients

2 cups macaroni, uncooked 1 pound ground beef 1 green bell pepper, diced (optional) 1/2 yellow onion, diced 1 teaspoon garlic powder 2 teaspoons chili powder 1/2 teaspoon salt 1/2 teaspoon pepper 2 small cans diced tomatoes or 2 cans tomato soup 1 (16-ounce) can kidney beans, drained 4 ounces mozzarella or Cheddar cheese, grated

Instructions

  1. Cook macaroni for about 7 minutes.
  2. Meanwhile, brown meat, bell pepper (if using) and onion in a large saucepan; drain fat.
  3. Add garlic, chili powder, salt and pepper. Mix well and cook over low heat for about 5 minutes.
  4. Add cooked macaroni, tomatoes or tomato soup and kidney beans. Heat thoroughly.
  5. Just before serving, add the grated cheese. Cover and heat until cheese melts.
