Cheddar-Apple Pie Bars are a savory-sweet dessert bar inspired by the classic pairing of apple pie and sharp cheddar cheese.

Ingredients

3 cups + 4 teaspoons all-purpose flour, divided 1 1/2 cups (3 sticks) cold butter, cubed 2 1/2 cups granulated sugar, divided 4 to 5 tablespoons ice water 6 ounces Hook’s One Year Sharp Cheddar cheese, shredded (1 1/2 cups) 6 medium tart apples, peeled, cored and thinly sliced 1 tablespoon apple pie spice* Vanilla ice cream

Instructions

  1. Heat oven to 350 degrees F. Grease a 13 x 9 inch baking dish.
  2. Place 3 cups flour and cold butter into a food processor; cover and pulse just until mixture resembles pea-sized crumbs.
  3. Add 1 1/2 cups sugar; cover and pulse until combined.
  4. Add ice water, a tablespoon at a time, pulsing after each addition until dough just holds together when pinched.
  5. Add cheddar; cover and pulse until dough is crumbly.
  6. Press half of the dough in the bottom of the prepared 13 x 9 inch baking dish.
  7. Place apples into a large bowl.
  8. Combine the apple pie spice, remaining flour and sugar in a small bowl; sprinkle on fruit and toss lightly.
  9. Spoon apple mixture over crust.
  10. Sprinkle with remaining dough.
  11. Bake for 50 to 60 minutes or until fruit is bubbly and topping is golden brown.
  12. Cool completely on a wire rack before cutting into bars.
  13. Serve with ice cream.

Notes

If you don’t have apple pie spice (and it’s something I don’t bother buying as I don’t use that much of it), make your own. Halve the ingredients if you don’t need this much for a recipe.

Apple Pie Spice

3 tablespoons ground cinnamon
2 teaspoons ground nutmeg
2 teaspoons allspice
