Carnitas (Little Meats) is a traditional Mexican dish made from pork that is slow-cooked until tender and then shredded or chopped.
3 pounds pork shoulder, cut into several large pieces
1/4 cup vegetable oil (we use avocado oil)
3 tablespoons kosher salt
1 onion, chopped
6 cloves garlic, crushed
3 tablespoons lime juice
1 tablespoon chili powder
1 tablespoon Mexican oregano
1 tablespoon ground cumin
4 (14.5 ounce) cans chicken broth
You can use a slow cooker for the first cooking. After browning, add pork to a slow cooker with the remaining ingredients, and cook on LOW for 8 to 9 hours.
