Caramel Apple Pie Cookies are a delightful treat that combines the flavors of classic apple pie, caramel and cookies into one delicious dessert.

Ingredients

Units Scale
Dough 1 cup shortening 1 1/2 cups granulated sugar 2 eggs 2 3/4 cups all-purpose flour 2 teaspoons cream of tartar 1 teaspoon baking soda 1/2teaspoon salt Cinnamon-Sugar 2 tablespoons cinnamon 2 tablespoons granulated sugar Topping 1 can apple pie filling 1 jar caramel sauce Chopped walnuts (optional)

Instructions

  1. Cream shortening, sugar and eggs.
  2. Sift dry ingredients into first mixture.
  3. Roll dough into walnut-size balls.
  4. Mix cinnamon and sugar together. Roll balls in cinnamon-sugar.
  5. Chill dough balls for one hour.
  6. Place balls 2 inches apart on an ungreased baking sheet.
  7. Bake at 350 degrees F for 8 to 10 minutes.
  8. Remove cookies to a wire rack to cool.
  9. Meanwhile, chop the apples in the filling to make them smaller.
  10. Spoon filling in a thin layer over the top of each cookie.
  11. Drizzle with caramel topping, and sprinkle chopped walnuts over the drizzle, if desired.

Notes

These cookies are best eaten the same day they are made.

You can bake the basic cookies, store when cool, then add the toppings as needed.
