Cabbage Roll Soup

1 pound ground beef or ground turkey
2 teaspoons extra-virgin olive oil
1 onion, chopped
4 teaspoons minced garlic
1/2 head cabbage chopped
1 green bell pepper chopped
32 ounces beef broth
29 ounces tomato sauce
2 (15 ounce) cans diced tomatoes with juice
2 tablespoons brown sugar
1 bay leaf
Kosher or sea salt to taste
Pepper to taste
1 cup uncooked rice
Instructions
- Heat the olive oil in a large pot over medium-high heat. Add the ground beef and season with salt and pepper to taste.
- Cook, breaking up the meat, until beef is browned.
- Add the onion and garlic cook for 2-3 minutes.
- Add the remaining ingredients, except rice, to the pot. Bring to a boil.
Reduce heat to simmer; cover pot and cook for 1 hour. - Add rice and cook for an additional 20 to 25 minutes.
- Remove bay leaf and discard.
Notes
If you want to use brown rice instead of white rice, cook for 45 minutes instead of 25 minutes.
