Biscochitos are the New Mexico state cookie, and they are traditional at Christmastime. If you spell it biscochito or bizcochito, it’s all the same wonderful cookie.
1 cup granulated sugar
1 cup butter, softened
3 tablespoons sweet sherry
1 egg
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons anise seed, crushed
1/4 teaspoon salt
1/4 cup granulated sugar
1 teaspoon ground cinnamon
Many times these cookies are stamped with the New Mexico flag which is the ancient Zia sun symbol. But if you would like to use a cookie stamp to personalize them, just use any stamp desired.
