Bacon Ranch Potato Salad

This salad is popular at barbecues, picnics and potlucks due to its bold flavors.

Ingredients

3 pounds new potatoes, peeled or unpeeled, cut into 1/2 inch cubes 1/3 cup cold water 1/2 cup mayonnaise 1/4 cup Ranch salad dressing 1/4 teaspoon salt 1/4 teaspoon pepper 1/8 teaspoon garlic powder 6 slices bacon, cooked crisp and crumbled 1/2 cup celery slices 1/2 cup red bell pepper strips 1/2 cup sliced green onions

Instructions

  1. Place cubed potatoes in water to amply cover. Boil until potatoes are tender, about 8 to 10 minutes; drain well.
  2. Mix mayonnaise, Ranch dressing and seasonings in a large bowl until well blended.
  3. Add potatoes and remaining ingredients; mix well.
  4. Refrigerate for at least 1 hour before serving.

Notes

Shredded cheese may be folded in or sprinkled on top after the potato salad has cooled.
