Arizona Pecan Brittle

I received this recipe from a fellow grand juror when I served on a Maricopa County Grand Jury back in the 1980s. Her family owns a pecan grove!

Ingredients

2 cups granulated sugar

2/3 cup light Karo syrup

3 cups pecans

1/4 cup water

3 teaspoons baking soda

Instructions

  1. Line a cookie sheet with aluminum foil and spray Pam over it.
  2. Combine sugar, Karo syrup, pecans and water in a saucepan. Boil to the hard-crack stage.
  3. Remove from heat and immediately add the baking soda. Stir furiously! Pour onto prepared cookie sheet. Let cool, then crack into pieces.
